Florentine Potatoes - cooking recipe

Ingredients
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    1 tbsp. butter
    1 can 16 oz. whole new potatoes, drained and sliced
    1 can original style stewed tomatoes
    1 can 15 oz. spinach, drained
    1/4 c. grated parmesan cheese
Preparation
    Saute onion and pepper, in butter until soft. Add potatoes, saute 2 minutes. Add tomatoes. Cook over high heat until slightly thickened. Add spinach, heat through. Sprinkle with Cheese.
