Creole Eggplant("Southern Living Cooking Light" Cookbook) - cooking recipe
Ingredients

1 medium eggplant, peeled and cubed
1 medium onion, chopped
1 medium-size green pepper, chopped
2 cloves garlic, minced
1 (8 oz.) can tomato sauce
1/2 tsp. dried whole dill weed
1/4 tsp. dried whole rosemary, crushed
1/4 tsp. dried whole thyme
Preparation

Combine all ingredients in a skillet.
Cover and cook over low heat 15 to 20 minutes or until tender, stirring occasionally. Makes 6 servings (about 38 calories per serving).
