Low Carb Cheeseburger Quiche Lunch Snacks - cooking recipe

Ingredients
    1 lb. lean hamburger (85% or better)
    1 small onion, diced
    4 slices crisp-cooked bacon, chopped
    3 medium eggs
    1/2 c. whole mayonnaise
    1/2 c. half and half or heavy cream
    8 oz. shredded Cheddar
    1/4 tsp. minced garlic
    1/4 tsp. fresh ground black or to taste
    salt to taste (careful the bacon has salt)
Preparation
    Preheat oven to 350\u00b0.
    Brown hamburger in a heavy skillet; add onion.
    Remove and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer until you have a fine mix.
    Drain well of any excess grease and press into the bottom of a deep-dish pie pan.
    Set aside.
    Combine remaining ingredients in mixer bowl and whip well.
    Pour mixture over beef \"crust\" and bake 40 to 45 minutes until top is browned and \"set\".
    Cool for 15 to 20 minutes to slice.
    This can be packaged in Ziploc or plastic containers for meals quickly microwaved over the next 3 to 5 days. (Does not freeze well, though.)
    Makes 6 servings.
