Cauliflower Mashed Potatoes - cooking recipe

Ingredients
    3 slices bacon (fried then crumbled)
    2 1/2 c. cauliflower
    3/4 c. sour cream (low fat version works just as well)
    1/2 c. grated cheddar cheese
    1 sm. yellow onion, finely chopped
    3/4 tsp. salt
    1/4 tsp. pepper
Preparation
    Cook the cauliflower until firm, yet tender. Coarsely mash cauliflower with potato masher.
    Add the sour cream, onion, cheese, salt and pepper.
    Mix well.
