Cottage Cheese Pancakes(Makes Approximately 16 Pancakes) - cooking recipe

Ingredients
    5 medium eggs, beaten or egg substitute
    2 c. cottage cheese
    5 tsp. melted butter or 3 tsp. extra light olive oil
    1/2 tsp. salt
    6 Tbsp. unbleached, all-purpose flour
    3 Tbsp. soy flour
Preparation
    In a medium-sized bowl, combine beaten eggs (or substitute), cottage cheese, melted butter (or olive oil) and salt.
    Sift together the flour; add to the other ingredients and mix.
    Brown on a hot griddle in a mixture of melted butter and light olive oil.
    Serve with fresh fruit, applesauce, jam, molasses or maple syrup.
