Zucchini Relish - cooking recipe

Ingredients
    1 1/2 c. chopped onion (about 1 large)
    2 cloves garlic, minced
    2 tsp. olive oil
    2 c. chopped zucchini (about 1 large)
    1/2 c. chopped green pepper
    1/2 c. chopped sweet red pepper
    1/4 c. chicken broth
    1/4 c. cider vinegar
    1 bay leaf
    1/4 tsp. ground allspice
    1/8 tsp. crushed red pepper
Preparation
    Saute onion and garlic in oil in a medium saucepan until tender.
    Add zucchini and peppers; cook for 3 minutes over medium heat.
    Stir in remaining ingredients; cover and simmer 10 minutes. Discard bay leaf.
    Store relish in airtight containers in refrigerator up to 5 days.
    Yields 3 cups.
