Ingredients

1 1/2 c. sugar
4 c. milk
4 large egg yolks
pinch of salt
8 Tbsp. flour
1 stick butter
1 can coconut
2 tsp. vanilla
Preparation

Mix sugar, flour and salt in heavy saucepan until smooth.
Add milk.
Mix well.
Beat egg yolks; strain and add to mixture.
Add butter; cook until thick (stirring constantly with wooden spoon). Remove from heat; add vanilla and 1/2 of coconut.
Mix. Pour into baked pie shells.
Sprinkle with rest of coconut on top of meringue and slowly brown.
