Saguaro Chicken Salad - cooking recipe

Ingredients
    Cilantro-Lime Grilling Sauce
    4 boneless, skinless chicken breast halves (about 1 1/4 lb.)
    1/2 c. Mazola corn oil
    3 Tbsp. balsamic vinegar
    2 tsp. prepared spicy brown mustard
    1 small clove garlic, minced
    1 bunch arugula, washed and patted dry
    1 head bibb lettuce, washed and patted dry
    6 large mushrooms, sliced
    6 large radishes, sliced
    1 red pepper, cut into thin strips
    1 cucumber, peeled and thinly sliced
    chopped fresh cilantro (optional)
Preparation
    Prepared Cilantro-Lime Grilling Sauce; add chicken to coat. Let stand at room temperature 30 minutes.
