Fruit Oatmeal Bars - cooking recipe

Ingredients
    1 1/4 c. flour
    1 1/4 c. oatmeal
    1/2 c. sugar
    3/4 c. melted butter
    1/2 tsp. baking soda
    1/4 tsp. salt
    2 tsp. vanilla
    10 oz. jar apricot preserves or other fruit
    1/2 c. coconut
Preparation
    Crumb Mixture:
    Combine flour, oats, sugar, butter, baking soda, salt and vanilla.
    Beat at low speed.
    Scrape bowl often until mixture is crumbly (1 to 2 minutes).
    Reserve 1 cup mixture; press remaining mix into a 13 x 9-inch baking dish.
