Cashew Chicken - cooking recipe
Ingredients

2 chicken breasts, diced
2 Tbsp. cooking oil
1 Tbsp. cornstarch
1/4 c. soy sauce
1/4 c. water
1/2 c. cashews
1/4 c. mushrooms, sliced
1/2 c. sliced celery
1 clove garlic, minced
1 (8 oz.) can sliced water chestnuts
1/2 c. diced onion
1 medium tomato, chopped
salt and pepper to taste

Preparation

Fry chicken with mushrooms, celery and garlic for 3 minutes in oil.
Add water chestnuts and onions.
Fry 3 minutes.
Mix cornstarch, water, soy sauce, salt and pepper.
Pour into pan. Stir and cook 2 minutes.
Add tomatoes and cashews and cook 2 minutes.
Serve over rice.
Makes about 4 servings.
