Chili Rellenos - Jose(Serves 6 To 8) - cooking recipe

Ingredients
    1 (1 lb. 10 oz.) can whole green chiles (not hot ones) or 18 whole green chiles
    1 lb. Monterey Jack cheese, cut in strips about 1 inch wide, 3 inches long and 1/2 inch thick
    1/2 or 1 lb. Cheddar cheese, grated
    5 large eggs
    1/4 c. flour
    1 1/4 c. milk
    1/2 tsp. salt
    black pepper to taste
    liquid red pepper to taste
    paprika
Preparation
    Carefully rinse seeds from chiles with cold water.
    Spread chiles in single layer on paper toweling.
    Carefully pat chiles with another piece of paper toweling until they are dry.
    Slip a strip of Monterey Jack cheese into each chile.
