Sweet Potato Meringue Pie - cooking recipe

1 (30 oz.) can sweet potatoes, drained and mashed
1 c. sugar
1 Tbsp. all-purpose flour
1/4 c. butter or margarine, melted
1/3 c. evaporated milk
1/2 c. milk
dash of salt
1/8 tsp. lemon extract
1 1/2 tsp. vanilla extract
3 eggs, separated
1 unbaked 10-inch pastry shell
1/4 tsp. cream of tartar
1/2 tsp. vanilla extract
1/3 c. sugar
Preparation

Combine first 9 ingredients and egg yolks; beat until combined.
Pour mixture into pastry shell and bake at 400\u00b0 for 10 minutes.
Reduce heat to 350\u00b0 and bake for 30 additional minutes or until set.
Beat egg whites with cream of tartar and vanilla until soft peaks form.
Gradually add 1/3 cup sugar, one tablespoon at a time, beating until stiff peaks form.
Spread meringue over filling, sealing to edge of pastry.
Bake at 350\u00b0 for 10 to 12 minutes or until golden.
Cool completely before serving.
Yield:
1 (10-inch) pie.
