Agnes Lyons Pepper Relish - cooking recipe

Ingredients
    24 green peppers
    24 red peppers
    20 onions
    5 lb. sugar
    1/2 gal. cider vinegar
    1/4 c. salt
    1 box pickling spices
Preparation
    Wash, clean and drain peppers.
    Grind peppers fine.
    Squeeze and drain again after grinding.
    Grind onion.
    While grinding onions, prepare a pot of boiling water.
    Onions should have boiling water over them for 10 minutes.
    Drain and put 3 trays of ice cubes to cool onions.
    Put onions in pot and add all other ingredients except spices.
    Put spices in cheesecloth and let it float in pickle after it starts to boil for 10 minutes.
    Makes 12 pints.
