Zucchini Soup - cooking recipe

Ingredients
    2 cloves garlic, chopped
    1 large onion, chopped
    2 Tbsp. olive oil
    4 c. zucchini, cubed
    1 rib celery
    1 large potato, cubed
    1 tsp. parsley
    2 c. chicken broth
    1/2 tsp. pepper
    1 tsp. salt
Preparation
    Saute garlic and onion in olive oil.
    Add zucchini, celery, potato and parsley.
    Cook together until vegetables are softened. Add chicken broth (or 2 cups water and 2 chicken bouillon cubes), pepper and salt.
    Cook for 30 minutes.
    Put through blender; adjust seasonings.
    May be served hot or cold.
