Beef Stroganoff (Governor Jim Guy Tucker'S Favorite Recipe)(Grandma'S Recipe) - cooking recipe

2 lb. filet of beef
4 Tbsp. butter
1 c. chopped onion
1 clove garlic, finely chopped
3 Tbsp. flour
2 tsp. meat extract paste
1 Tbsp. catsup
1/2 tsp. salt
1/8 tsp. pepper
1 can beef bouillon, undiluted
1/4 c. dry white wine
1 Tbsp. fresh snipped dill
1 1/2 c. sour cream
1 1/2 c. cooked wild rice
1 1/2 c. cooked white rice or 3 c. cooked noodles
Preparation

Trim fat from beef and cut filet crosswise into 1/2-inch thick slices.
Cut each slice across grain into 1/2-inch wide strips (about 2 inches long).
Slowly heat large, heavy skillet.
Melt 1 tablespoon butter; add beef strips, just enough to cover skillet bottom.
Over high heat, sear quickly on all sides.
Remove with tongs as meat finishes browning (it should be brown on outside and rare on inside).
