Buttermilk Fried Chicken - cooking recipe

Ingredients
    4 chicken breasts, deboned and skinless
    2 c. buttermilk
    2 Tbsp. parsley
    1 tsp. oregano leaves
    1 tsp. salt
    1/2 tsp. pepper
    1/4 c. shortening
    1/4 c. margarine
    1/2 c. flour
    1/2 c. chicken broth
Preparation
    Place chicken into bowl.
    Pour buttermilk over; marinate 1 hour.
    In another bowl, mix flour, parsley, oregano, salt and pepper.
    Remove the chicken from buttermilk; roll chicken pieces in seasoning mixture.
    Reserve the buttermilk and pour into buttered casserole.
    Heat shortening and margarine in heavy skillet; fry chicken just until brown.
    Remove, scrape up brownings, and add chicken broth.
    Cook for 2 minutes.
    Place chicken on top of buttermilk in casserole.
    Pour all your scraped up brownings over the chicken.
    Bake, uncovered, in a 375\u00b0 oven until tender, about 1 hour.
    Makes 4 servings.
