Indian Curried Beans - cooking recipe
Ingredients

3 c. dry black-eyed peas (prepared as below)
4 ripe tomatoes (spaghetti sauce may be substituted)
1 large onion, chopped
small amount freshly grated ginger
few cloves minced or crushed garlic
cilantro
salt to taste
ready-mixed curry powder
Garam Masala powder
2 Tbsp. vegetable oil
Preparation

Heat oil in a nonstick frying pan.
Add garlic, ginger and chopped onion and stir-fry for 5 minutes.
Add diced tomatoes and cook 10 minutes, stirring frequently.
Add curry powder and prepared beans.
Bring mixture to a boil and cook on medium heat for 10 more minutes.
Garnish with Garam Masala and finely chopped cilantro.
