Rich Coconut Cream Pie By Wanda Smith - cooking recipe

1/2 c. sugar
1/2 tsp. salt
2 Tbsp. cornstarch
2 c. evaporated milk
2 egg yolks, slightly beaten
2 tsp. unsalted butter (no substitutes)
1 tsp. butter
1 c. coconut
1 baked pie shell
Preparation

Mix sugar, salt and cornstarch in saucepan. Stir in egg yolks. Turn heat on medium and slowly stir in milk. Boil over medium heat, stirring constantly. When mixture thickens, remove from heat and add butter, coconut and vanilla. Pour into baked pie shell. Chill for 2 hours. Add meringue or whipped topping and sprinkle with 1/4 cup coconut.
