Double-Good Fudge - cooking recipe

vegetable cooking spray
1 (16 oz.) pkg. powdered sugar, sifted
1 c. chunky peanut butter
1/4 c. plus 2 Tbsp. milk
1/2 tsp. vanilla extract
1/2 c. butter or margarine
1 (16 oz.) pkg. powdered sugar, sifted
1/4 c. milk
1/2 c. cocoa
1 tsp. vanilla extract
Preparation

Coat eight (4 ounce) shallow baking dishes with vegetable cooking spray; set aside.
Combine 1 package powdered sugar, chunky peanut butter and 1/4 cup plus 2 tablespoons milk in a large microwave-safe bowl, stirring well.
Add 1/2 teaspoon vanilla; stir until smooth.
Cover with wax paper and microwave at High 2 to 3 minutes.
Spread evenly into prepared dishes.
Place 1/2 cup butter in a separate microwave-safe bowl.
Microwave at High 1 minute or until melted.
Stir in 1 package powdered sugar, 1/4 cup milk and 1/2 cup cocoa.
Cover with wax paper and microwave at Medium-high (70%) power for 2 to 3 minutes.
Add 1 teaspoon vanilla; stir until smooth.
Spread chocolate mixture evenly over peanut butter layers; cool.
