Zucchini Bread(Yields 2 Loaves) - cooking recipe
Ingredients

2 c. zucchini, grated medium
3 tsp. vanilla
1/3 c. oil
8 oz. crushed pineapple, drained
3 eggs
1/2 c. sugar
2 Tbsp. Sweet 'N Low sugar substitute
1 1/2 c. flour
1 1/2 c. whole wheat flour
1/2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 tsp. salt
1 c. chopped nuts (optional)
Preparation

Beat eggs.
Add oil, sugar, sugar substitute, vanilla, pineapple and zucchini.
Sift flours, baking powder, baking soda, cinnamon, nutmeg and salt.
Add to egg mixture.
Add nuts, if desired.
Bake at 375\u00b0 in well-greased loaf pans for 40 minutes. Cool on wire rack.
May be frozen.
