Pasta Primavera(Springtime Pasta) - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 medium diced onion
    1 Tbsp. chopped garlic
    3 to 4 c. sliced vegetables (zucchini, squash, red and green pepper, fresh mushrooms, cauliflower or broccoli)
    1 (14 oz.) can diced tomatoes, drained (reserve juice)
    1 (6 oz.) can tomato paste
    3/4 c. water
    1/2 tsp. salt
    1/8 tsp. pepper
    1 tsp. dried basil
    linguine
    olives
Preparation
    Cook pasta.
    Saute onion and garlic in medium skillet about 1 minute.
    Add vegetables and saute 3 to 4 minutes.
    Stir in reserved tomato juice, tomato paste and water.
    Simmer 5 to 8 minutes or until vegetables are tender.
    Add tomatoes and basil, salt and pepper.
    Simmer another couple of minutes.
    Serve over pasta.
    Garnish with olives.
