Zucchini Bran Muffins - cooking recipe

Ingredients
    1 c. all-purpose flour
    1/3 c. light brown sugar, packed
    2 tsp. baking powder
    1/2 tsp. salt
    1/4 tsp. baking soda
    1 egg, beaten
    3/4 c. milk
    3 Tbsp. vegetable oil
    1 c. Nabisco 100% bran
    1/2 c. grated zucchini, squeezed dry
    1/3 c. chopped walnuts
    1/2 tsp. ground cinnamon
Preparation
    Preheat oven to 400\u00b0.
    Grease 12 to 15 (2 1/2-inch) muffin pan cups.
    In medium mixing bowl, combine flour, brown sugar, baking powder, salt and soda.
    In small bowl, blend egg, milk and oil; stir in 100% bran.
    Let stand 5 minutes.
    Add zucchini, walnuts and cinnamon; mix until well combined.
    Stir into flour mixture just until blended.
    Do not overmix.
    Fill baking cups 2/3 full. Bake 20 to 25 minutes.
