Scrumptious Sweet Potato Pie - cooking recipe

Ingredients
    1 1/4 c. cooked mashed potatoes
    3/4 c. sugar
    1/2 c. firmly packed brown sugar
    1/2 pkg. French vanilla instant pudding mix
    3/4 c. evaporated milk
    2 large eggs (room temperature)
    6 Tbsp. butter or margarine, softened
    1 1/2 tsp. vanilla extract
    9-inch deep-dish unbaked pie shell
Preparation
    With an electric mixer, combine first 8 ingredients. Beat until well blended. Pour into pastry shell. Bake at 450\u00b0 for 10 minutes. Reduce temperature to 350\u00b0 for 40 minutes or until set. Cool on wire rack. Serves 8.
