Swiss Steak - cooking recipe

Ingredients
    1 1/2 lb. beef or venison
    4 Tbsp. flour
    1 tsp. salt
    1/2 tsp. pepper
    2 Tbsp. oil
    1 1/2 c. tomatoes
    3 large onions, thinly sliced
    1 stalk celery, diced
    1 clove garlic, minced
    1 bell pepper, thinly sliced
Preparation
    Combine flour, salt and pepper.
    Lay meat on chopping board and sprinkle meat with flour mixture.
    Pound in flour mixture, turn meat over and repeat.
    (This pounding also tenderizes the meat.)
    In hot oil in skillet, brown meat.
    Add rest of ingredients.
    Stir well.
    Simmer about 1 1/2 to 2 hours, or until meat is tender.
    Serve over rice.
    Serves four people.
