Zucchini Appetizer A La Groppuso - cooking recipe

Ingredients
    4 c. unpeeled zucchini, grated
    1 3/4 c. biscuit mix
    3/4 c. Romano cheese
    1/4 c. olive oil
    4 eggs, beaten
    1 large onion, chopped
    4 or 5 cloves garlic, minced
    3 Tbsp. parsley, minced
    1/2 tsp. salt
    1/2 tsp. crushed oregano
Preparation
    Combine all ingredients in a large mixing bowl and stir until well blended.
    Fill regular or mini muffin tins half full.
    Bake at 350\u00b0 for 20 to 25 minutes, until golden brown.
    May be served hot or cold.
