Leila'S Eggplant Salvia - cooking recipe
Ingredients

2 small eggplant, peeled
2 medium onions, peeled
2 large tomatoes, peeled
3 Tbsp. lemon juice
3 Tbsp. olive oil or vegetable oil
salt and pepper
Italian seasoning
Preparation

Slice eggplant, onion and tomatoes into very thin slices. Arrange in layers in greased casserole: eggplant, onion and tomatoes (in that order), seasoning lightly between layers. Combine lemon juice and oil; drizzle on top.
The dressing will penetrate, even though it appears scant.
Bake, uncovered, at 350\u00b0 for about 50 minutes, basting occasionally with juices that form in the dish.
Leftovers freeze well.
