Quick And Easy Risotto - cooking recipe
Ingredients

2 Tbsp. olive oil
1 c. chopped mushrooms
1/3 c. sliced green onions
1 c. long grain rice (uncooked)
1 1/2 c. water
1/2 c. dry white wine
3/4 c. (3 oz.) Di Giorno shredded Pecorino Romano cheese, divided
1/4 c. half and half or milk
Preparation

Heat oil in saucepan. Add mushrooms and onions. Cook and stir on medium heat 5 minutes or until tender. Stir in rice, water and wine. Bring to a boil. Reduce heat to low. Cover. Simmer 20 minutes or until rice is tender. Stir in 1/2 cup of the cheese and half and half. Serve with remaining cheese. Makes 4 to 6 servings. Preparation time: 10 minutes. Cooking time: 25 minutes.
