Mincemeat - cooking recipe

Ingredients
    1 large hogs head or 2 small ones, cooked until tender and put through coarse chopper
    3 oranges, seeded
    3 (15 oz.) pkg. seedless raisins
    8 c. peeled cooking apples, chopped (tart)
    2 qt. cherries (not sweetened)
    4 c. white sugar
    2 tsp. cloves
    1 tsp. nutmeg
    1 tsp. ginger
    1 lb. brown sugar
    1 Tbsp. cinnamon
    1 c. vinegar
    4 c. meat broth
Preparation
    Chop oranges, raisins, apples and cherries and put in large kettle.
    Add remaining ingredients.
    Cook for 30 minutes.
    Then simmer and stir occasionally (covered).
    If canning, cook in pressure cooker 15 minutes at 10 pounds pressure.
    If not canning, cook additional 30 minutes.
