Zucchini Cakes - cooking recipe

Ingredients
    vegetable oil
    3 c. shredded unpared zucchini, drained
    1/2 c. shredded Cheddar cheese
    3 Tbsp. snipped parsley
    1 large clove garlic, finely chopped
    1 egg
    1 tsp. salt
    dash of pepper
    1 c. Bisquick mix
Preparation
    Heat oil in 10-inch skillet.
    Mix zucchini, cheese, parsley, egg, salt and pepper; stir in baking mix.
    Drop by rounded tablespoon into hot oil.
    Fry until golden brown, about 1 minute on each side; drain.
    Makes about 2 dozen cakes.
