Naomi'S Progressive Zucchini Casserole - cooking recipe

Ingredients
    5 to 6 medium zucchini, sliced 1/2-inch
    1 c. shredded carrots
    2 large onions, chopped
    1 green pepper, chopped
    6 Tbsp. butter or oil
    2 1/4 c. herb stuffing cubes
    1 can favorite condensed soup (cream of mushroom or potato, zesty tomato, etc.)
    1/2 c. sour cream
Preparation
    Cook sliced zucchini in boiling water until soft, drain.
    Put in large bowl.
    Saute carrots, onions and green peppers in butter (oil) until tender.
    Add to bowl.
    To bowl, add 1 1/2 cups stuffing cubes, sour cream and soup; mix.
    Put in 2-quart casserole dish. Melt margarine.
    Add remaining cubes.
    Toss and put over top of casserole.
    Bake 40 minutes at 350\u00b0.
