Microwave Peanut Brittle - cooking recipe
Ingredients

1 c. raw peanuts
1 c. sugar
1/2 c. light corn syrup
1/8 tsp. salt
1 tsp. butter or margarine
1 tsp. vanilla
1 tsp. baking soda
Preparation

Stir together peanuts, sugar, syrup and salt in 1 1/2-quart casserole. Microwave on HIGH for 7 to 8 minutes, stirring well after 3 minutes. Add butter and vanilla to syrup, blending well. Microwave on HIGH for 1 to 2 minutes more. Peanuts will be lightly browned and syrup very HOT. Add baking soda and gently stir until light and foamy. Pour mixture onto lightly greased cookie sheet; let cool 30 minutes to 1 hour. When cool, break into small pieces and store in airtight container.
