No Fat Gazpacho Salad - cooking recipe
Ingredients

3 c. seeded, chopped tomato
1 c. peeled, chopped cucumber
1 c. chopped green pepper
1/4 c. thinly sliced green onions
1/4 c. chopped purple onion
2 Tbsp. red wine vinegar
1/8 tsp. salt
1/8 tsp. pepper
2 cloves garlic, minced
Preparation

Combine all ingredients in a bowl, tossing gently to mix. Cover and chill at least 1 hour.
