Leftover Meat And Rice Casserole - cooking recipe

Ingredients
    1 medium onion, sliced fine
    3 Tbsp. shortening
    1 c. diced cooked meat
    1/2 c. uncooked rice
    2 cans tomatoes
    1 c. water
    1 1/2 tsp. salt
    1/8 tsp. pepper
Preparation
    Brown onion in hot shortening; add meat and rice.
    Cook slowly until rice is golden brown.
    Add tomatoes, water and seasoning. Stir well and pour into greased casserole.
    Cover and bake at 400\u00b0 for 30 minutes, then remove cover and bake 15 minutes longer. Serve at once from casserole.
