Spanish Chicken - cooking recipe

Ingredients
    1 (3 lb.) chicken, cut into pieces
    1 1/2 c. tomatoes, chopped
    1 green pepper, chopped
    1 onion, chopped
    1 pimento, chopped
    salt
Preparation
    Place all ingredients in pot with just enough water to cover. Cover and simmer 1 1/2 hours.
    If there is too much liquid, remove cover and cook until most of it is evaporated.
    Yields 4 servings. Good served with rice.
