Indian Summer Apple Cake - cooking recipe

Ingredients
    3 eggs
    1 1/4 c. oil
    2 c. sugar
    2 1/2 c. self rising flour
    2 medium apples, peeled, cored, and chopped
    1 c. shredded coconut
    1 c. chopped pecans
Preparation
    Blend together eggs, oil, and sugar until creamy.
    Add flour, a small amount at a time, blending well after each addition. Batter will be stiff.
    Fold in apples, coconut, and pecans.
    Place in greased and floured 10 inch tube pan;
    bake at 350 degrees about one hour or until wooded pick inserted in center of cake comes out
    clean.
    Cool in pan for 30 minutes; remove cake.
