Stuffed Potatoes - cooking recipe

Ingredients
    6 large baking potatoes
    1 pt. sour cream
    2 c. Cheddar cheese
    small bunch of chopped spring onions
    1 stick melted butter
Preparation
    Bake potatoes until done.
    While still
    hot, cut in half lengthwise and scoop out potato, leaving skins intact.
    Mix potato with butter, sour cream, 1 1/2 cups of the cheese and onions.
    If necessary, thin with more sour cream.
    Add salt and pepper to taste.
    Place mixture back in skins.
    Top with remaining cheese and reheat until cheese melts.
