Moro De Frijoles(Rice And Beans Cooked Together) - cooking recipe

Ingredients
    1 lb. rice
    3 c. water
    1 can beans
    1 Tbsp. salt
    2 strips bacon
    1 oz. fresh coriander or 1 tsp. dry coriander
    2 Tbsp. onions
    1 tsp. garlic
    1 small green pepper
    3 small red tomatoes
    1 tsp. vinegar
    1 tsp. tomato paste
    4 Tbsp. oil
Preparation
    Clean and wash rice.
    Set aside.
    Mix bacon, tomatoes and stir-fry in 1 tablespoon of oil.
    Add onions, garlic, coriander, pepper, oregano, vinegar, salt and tomato paste.
    Stir-fry and add a bit of water, if necessary.
    Add beans and stir 3 minutes. Add rice and keep stirring for an other few minutes.
    Add hot water and let cook.
    When rice is tender, add the remaining oil and cook gently for 5 minutes.
    Serve with chicken or beef stew, Dominican style and avocado and tomato salad.
    Serves 6.
