Zucchini Bread - cooking recipe

Ingredients
    1 c. oil
    1 1/2 c. sugar
    3 eggs
    3 c. shredded zucchini
    2 tsp. vanilla
    1 c. chopped nuts
    1 c. raisins
    3 c. flour
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    1 Tbsp. cinnamon (2 Tbsp. if no nuts or raisins)
Preparation
    Combine oil, sugar, eggs and vanilla.
    Add zucchini and then sifted dry ingredients.
    Add nuts and raisins if desired.
    Bake 60 minutes at 350\u00b0.
    Yield:
    with nuts and raisins, 2 regular or 6 small loaves.
    Without nuts and raisins, 2 medium or 3 small loaves.
