Vidalia Onion Casserole(Serves 6) - cooking recipe

Ingredients
    2 Tbsp. butter
    2 Tbsp. flour
    1 c. chicken broth
    1 small can evaporated milk
    3 c. Vidalia onions, wedged and parboiled
    1/2 tsp. salt
    1/2 tsp. pepper
    1 c. crushed Ritz crackers
    1/2 c. grated cheese
Preparation
    Melt butter; stir in flour, broth and evaporated milk.
    Stir constantly until mixture begins to thicken and is smooth.
    Stir cheese into sauce.
    Drain onions and add to sauce with salt and pepper.
    Pour into buttered 1 1/2-quart casserole dish.
    Cover with cracker crumbs.
    Bake at 350\u00b0 for 30 minutes.
