Coconut Meringue Cookies - cooking recipe

Ingredients
    3 egg whites
    2/3 c. sugar
    2 tsp. vanilla (white)
    2 cans (4 oz. each) flaked coconut
Preparation
    Beat egg whites until foamy, white and double in volume in a medium bowl.
    Beat in sugar, 1 tablespoon at a time, beating all the time until meringue stands in firm peaks.
    Fold in vanilla and coconut.
    Drop by teaspoon, 2 inches apart, on greased and floured large sheets.
    Bake in very slow oven (250\u00b0) for 35 minutes or until lightly golden.
    Remove from sheet to wire racks.
    Let stand to cool completely.
