Stuffed Eggplant - cooking recipe

Ingredients
    3 medium eggplant
    1 lb. sausage
    3 medium tomatoes, diced
    2 medium yellow squash
    2 (6 oz.) cans tomato sauce
    2 c. Cheddar cheese
    1 tsp. dried oregano
    1 small onion, chopped
    1 c. dried bread crumbs
    1 egg
    salt and pepper
Preparation
    Halve eggplant lengthwise.
    Hollow out center.
    Cook sausage; drain.
    In a large bowl, mix sausage, eggplant centers, tomatoes, squash, onion, salt and pepper.
    Mix well.
    Stuff into eggplant shells.
    Spoon 4 tablespoons of tomato sauce over each.
    Mix bread crumbs, oregano, egg and remaining tomato sauce.
    Spoon over eggplant.
    Cover with cheese.
    Bake at 350\u00b0 for 1 1/2 hours. Serves 6.
