Crawfish Iberia - cooking recipe

Ingredients
    1 lb. crawfish tails
    2 boxes frozen spinach
    1/2 onion
    4 tsp. flour
    1 stick butter
    1/2 c. milk
    6 oz. grated American cheese
Preparation
    Saute onions in butter until clear.
    Add crawfish and saute for 3 minutes.
    Add flour; stir until smooth.
    Add milk; simmer for 3 to 5 minutes.
    Stir in cooked spinach.
    Top with grated cheese.
    Bake at 350\u00b0 for 20 minutes.
    Serves 8 to 10.
