Ingredients

1 egg
1 c. sugar
1/2 c. oil
1 1/2 tsp. lemon juice
1 tsp. baking soda
1 c. persimmon pulp
1 3/4 c. flour
1/2 tsp. salt
1/4 tsp. ground cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 c. walnuts
1 c. raisins
1 c. powdered sugar
2 Tbsp. lemon juice
Preparation

Combine eggs, sugar and oil; mix well.
Stir 1 1/2 teaspoons lemon juice and baking soda into pulp.
Combine flour, salt and spices.
Add to egg mixture alternately with persimmon mixture, mixing well after each addition.
Stir in walnuts and raisins. Spread in greased and floured oblong pan.
Bake at 350\u00b0 for 25 minutes or until lightly browned.
Cool for 5 minutes.
