Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 medium onion, chopped
    1/4 c. celery, chopped
    1 bell pepper (about 3/4 c.)
    1 Tbsp. oleo
    1 1/2 c. cornbread, crumbled
    1 egg
    3/4 c. Cheddar cheese, grated
    1 tsp. salt
    1 can cream of chicken soup
Preparation
    Peel and cube eggplant; cook until tender.
    While eggplant is cooking, saute onion, bell pepper and celery in oleo.
    Mash eggplant, leaving water in the eggplant.
    Add crumbled cornbread and egg to mixture.
    Add onion, celery and bell pepper.
    Place in greased casserole.
    Top with cheese.
    Bake for 20 to 25 minutes at 350\u00b0.
