Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant, sliced
1 c. sliced mushrooms
1 c. Weight Watchers spaghetti sauce
1 c. grated cheese
sweet basil
Preparation

Spray small casserole with Pam.
Add sliced eggplant, mushrooms and 1/3 cup grated cheese, mixed together.
Sprinkle basil over ingredients or other herbs and spices to suit your taste.
Cover with spaghetti sauce (add more basil, if desired). Add remaining cheese.
Bake at 375\u00b0 for 30 to 40 minutes.
Serves 4.
