Low-Fat Bran Muffins - cooking recipe
Ingredients

1 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
2 c. 100% Bran cereal
1 1/2 c. skim or low-fat milk
1/3 c. firmly packed brown sugar (brown sugar substitute)
1 egg
1/2 c. applesauce
raisins (optional)
banana (over ripened, optional)
Preparation

Mix flour, baking soda, baking powder and cinnamon in a large bowl.
Mix cereal, sugar and milk in another bowl; let stand for 5 minutes.
Stir in egg and applesauce (add banana here if using it).
Add to flour mixture, stir until just moistened.
Spoon batter into muffin pan sprayed with Pam.
Bake 15 to 20 minutes at 400\u00b0.
Makes 12.
