Eggplant Casserole - cooking recipe

Ingredients
    2 1/2 lb. eggplant, peeled
    1/4 c. onion, grated
    2 c. milk
    2 eggs, beaten
    2 3/4 c. bread crumbs
    5 1/2 Tbsp. butter
    1 tsp. salt
    3/4 tsp. pepper
    2 c. buttered bread crumbs
Preparation
    Cook eggplant in salted water until tender.
    Mash eggplant and combine with next 7 ingredients.
    Place in casserole and bake at 350\u00b0 for 30 minutes.
    Cover top with bread crumbs.
    Bake 15 minutes longer.
