Red Beans And Rice - cooking recipe
Ingredients

2 oz. salt pork, diced or 3 slices bacon, cut up
1 medium onion, chopped (about 1/2 c.)
1 medium onion, chopped (about 1/2 c.)
1 medium green pepper, chopped (about 1 c.)
1 c. uncooked regular long grain rice
1 c. water
1 1/2 tsp. salt
1 (15 to 16 oz.) can red kidney beans, drained
Preparation

Cook salt pork in 3-quart saucepan, stirring occasionally, until crisp.
Stir in onion and bell pepper.
Cook, stirring occasionally, until onion is tender.
Stir in remaining ingredients.
Heat to boiling, stirring once or twice.
Reduce heat.
Cover and simmer 14 minutes.
Do not lift cover or stir. Remove from heat.
Fluff lightly with fork.
Cover and let steam 5 to 10 minutes.
Yields 12 servings.
