Spanish Chicken And Rice - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. chicken breasts, cut
    1 onion and green pepper, cut
    1 c. chicken broth
    1 medium can mushrooms, cut
    1 1/2 c. instant rice
Preparation
    Heat oil in large skillet over medium heat.
    Add chicken, onion and pepper.
    Cook and stir until chicken is done.
    Add broth and tomatoes; bring to a boil.
    Stir in rice and cover.
    Simmer for 10 minutes.
    Remove from heat.
    Let stand 3 minutes.
    Makes 4 servings.
