Country Cookies - cooking recipe

Ingredients
    2 c. vegetable shortening
    2 c. granulated sugar
    2 c. firmly packed dark brown sugar
    4 large eggs
    2 tsp. vanilla
    3 c. all-purpose flour
    2 tsp. baking soda
    2 tsp. salt
    4 c. quick cooking oats
    2 c. shredded coconut
Preparation
    In the large bowl of an electric mixer, cream shortening, granulated sugar and brown sugar.
    Add eggs and vanilla; beat until blended.
    Add flour.
    Sprinkle baking soda and salt over top.
    Beat until no traces of flour can be seen.
    With a wooden spoon, work in oats and coconut.
